Quick, easy, and uses ingredients you probably have on hand.
Remove skin and any bones from chicken and cut into cubes.
Pour flour and pepper in a bowl and dredge chicken through it until covered.
Place chicken and oil in a frying and cook until golden brown.
Add pineapple and heat through for 5 minutes.
In a mixing bowl, stir together the pineapple juice, soy sauce, vinegar, and cornstarch.
Add sauce to pan and simmer for 5 minutes.

darwishian 1y agoEasy recipe, good taste, and plenty of room to add your own twist. Tasted great on a bed of Jasmin rice.
Hafrommer 1y agoA great weeknight dish. Followed the suggestions to use less soy and substitute brown sugar for vinegar. The right move. Also added red pepper flakes to sauce for heat and diced fresh string beans and peppers for texture.

rinacat 1y agoI really liked it. I read the comments before I made it, so it was very good. To add a little twist to make it my own, I took the pineapple and juice and instead of putting it with the chicken, I used an emersion blender to make it into a creamy sauce. I then mixed it with the sauce. It was really good! Instead of vinger I used black cherry balsamic vineger and only two tsp of soy sauce.
