Crispy, browned, potatoes with little effort
This isn't really a recipe so much as a suggested preparation method.
Place four ounces (about 10) frozen potato rounds (i.e. "Tater Tots") on a heated waffle iron. Cook for 7 - 10 minutes depending on the heat of your iron. Press down firmly a time or two to flatten the potatoes as they thaw and bake.
Pop out into a cookie sheet and keep in an warm oven until ready to serve.
The result is a crispy browned "disk" of potatoes that are great under a couple of fried eggs or with applesauce.
I happen to use a waffle iron because that's what i have. But a flat sandwich iron or panini press would work as well.
This has become a "standard" method for breakfast potatoes in our kitchen. Quick, easy, and little mess to clean up.
