Easy and hearty
"Delicious! Much easier than most chicken recipes I've tried, which make you cook on the stove then the oven. I added crushed lemon, garlic, fennel, and croutons mixed into the potatoes and these flavors worked nicely as well.
As one more added bonus, we took the dish we used for roasting, with the leftover juices and baked on stuff and boiled the chicken bones in it for stock, then added back in our leftover chicken with some celery and carrots for a wonderful chicken soup."
Preheat oven to 450. Spray a large roasting pan thoroughly with cooking spray. Add sliced potatoes and onions, spray with olive oil, season with salt and pepper and toss to coat. Spread in an even layer.
Lay chicken on top of vegetables. Season with salt, lemon pepper and half of paprika. Turn chicken over and season other side.
Cover pan with foil and roast chicken in upper third of oven for 20 minutes. Remove the foil and roast for another 30 minutes until chicken is cooked through and potatoes are tender.
outdoorlover 5m agoUsed skin-on thighs and placed a slice of lemon on each one. Excellent flavor; hubby & I both liked it and want it again.
KrissyCake 6m agoMade this last night using breast instead of legs. Used sliced lemon and fresh lemon juice and chicken was pretty bland. Also, the potatoes were not cooked at all with the allotted time. Probably won't make again.
