A simple ingredient transforms an inexpensive meal into an elegant dinner. Great for parties & you don't have to tell your guest your secret to the delicious creamy sauce! I made this up when I ran out of sauce one night, its been a favorite ever since.
1) Start pasta to boil as directed on package, drain & keep warm while making sauce
2) In large pan, heat olive oil over medium heat, add onions & garlic
3) After the onions start to soften, add mushrooms if using, cooking & stirring for a few minutes, pour the wine in, scraping up any browned bits
4) Add the ground beef to skillet, crumbling as it browns. Drain if needed
5) After meat & veggies are cooked, add the jar of marinara, turn down the heat to medium-low (low simmer) scraping up the browned bits again
6) In a bowl, mix together the canned soup & water, stir into sauce mix, add more water if thinner sauce is desired.
7) Stir in chopped spinach, cook until wilted into sauce
8) I usually pour the sauce over the pasta & stir together so that the sauce can get into all the little spaces.
9) Sprinkle with fresh grated Parmesan
I like to serve this with a romaine salad & vinaigrette
