This has an amazing amount of flavor for something so nutritious!
In a large stock pot, saut chopped onions in a bit of oil. Then add everything else to the onions. You may need to add 1-2 cups of water, depending on how thick you want it. Bring to a boil and simmer for 30 minutes or until all vegetables are tender
Can use "Better than Bouillion" and water instead of chicken broth - it still tastes great.
