Ingredients

2 cups Frozen Shelled Edamame
1 1/2 cup Fresh Corn Kernels
1 1/2 cup Mango; Cubes (1 med)
1 cup Tomato; Chopped
1/2 cup Red Onion; chopped
1 cup Black Beans
2 tbsp Fresh Cilantro; chopped
1 tbsp Extra Virgin Olive Oil
1 tbsp Lime Juice
3/4 tsp Salt
1/4 tsp Ground Black Pepper

Original recipe makes 12 Servings

Preparation

1.) Prepare edamame per package directions. Drain and rinse under cold water.

2.) Transfer to large bowl.

3.) Stir in corn, mango, tomato, onion, black beans, cilantro, oil, lime juice, salt and pepper.

4.) Toss well.

This is so incredibly delicious! I absolutely love it. I added jalapeños which added a nice kick. My kids love it too!

This is super easy to make and tasty. It's perfect to take to a summer cook-out. I thought it needed a little kick so I added a de-seeded, finely chopped jalapeño. It's what it needed but if you're feeding this to kids- I would pass on adding a jalapeño
