Low carb, high protein and diabetic friendly

Ingredients

2 large Eggs; boiled, chopped
8 ounces Cottage Cheese; - low fat
4 ounces Shrimp; - small (50-70/lb)
1 pinch salt; - to taste
1 pinch Black pepper; - to taste
1/2 teaspoon Curry powder; - to taste
2 slices Multigrain bread; - toasted

Servings  

Preparation

Mix in a bowl and spice with salt, pepper and curry

Can be eaten with an ordinary salad or on whole-grain bread (nicest if it is

well-toasted)

Each (3/4 cup) serving (including one slice of 7-grain toast) contains an estimated:

To lower the carbs, serve this in a lettuce leaf wrap.

To lower the sadium, use a salt substitute or cut back on the salt.

You could add some finely chopped green or red pepper for color contrast.
