Are you a lacto-vegetarian? This is the recipe for you. A sweet mouthwatering delight of comfort cookies without eggs. And it's easy to make too...
1. Preheat oven at 350 F (177C).
2. Grease cookie sheet or use a nonstick cookie sheet.
3. Melt together in a sauce pan butter, sugar, milk or honey, and vanilla until sugar is well dissolved. Leave to cool.
4. Combine all dry ingredients (this will include coconut and oatmeal).
5. Fold together all ingredients.
6.Roll into balls the size of walnuts and place 1 1/2 inches apart on the baking sheet and flatten it slightly with a fork.
7. Bake for 15-20 minutes, or until golden brown.
8. Let the cookies cool on the sheets until they firm slightly. Then using a spatula carefully lift the cookies and transfer it to a cooling rack to cool completely.
If you want you can add raisins but the cookies are already sweet so cut down the sugar content to your liking.
Also in my try and error sessions I first baked the cookies on a baking sheet. Don't do that. the cookies will just stick to the paper and it cannot really come off.
