Suggest a better description>From African American Family Cookery. Stir together eggplant and cheese. Add salt, pepper, margarine and water. Mix well. Place mixture in casserole and bake at 350 degrees for 35-45 minutes in oven. Serves 3-4. Per serving: 105 calories; 5.5 g fat (1.7 g saturated fat; 47 percent calories from fat); 4 mg cholesterol; 470 mg sodium.
