2. In pan, heat oil, add garlic, then add eggplant. Cook about 15 minutes or until tender. Add spaghetti sauce and heat through. Set aside.
3. Cook lasagna noodles. While noodles are cooking, mix 1/3 ricotta, mozzarella, and parmesan cheeses.
4. Spray baking dish with cooking spray. Layer in this order: Cheese mix, Sauce, Noodles. Repeat layers. Top with remaining cheese, and a little sauce.
5. Bake for about 40-45 minutes, or until heated through and cheese has melted.
