Good with Pita chips or veggies.
Toss eggplant with 2 Tbsp oil and bake in 450 degree oven about 30 minutes, stirring occasionally, until soft and browned. Transfer to food processor or blender. with motor running add parsley, pepper flakes and garlic. Pour in remaining 1/2 cup oil and walnuts. Process 1-2 minutes until thick. Transfer to bowl. Blend goat cheese. Salt to taste.
