Eggs over medium with sweet potato hash
Dice up sweet potato and yellow squash (in cube like form). Saute in olive oil sweet potato until pretty tender. Add squash and spinach. Add salt and pepper. Saute a few more minutes till squash tender and spinach wilted.
Fry 2 eggs over medium in olive oil.
Plate hash and top with the 2 eggs
