Almost but not exactly like Mom's
In a large frying pan over medium heat, warm the ghee or butter. When hot, add cumin, onions, and zucchini and cook, stirring until vegetables are brown, about 8 minutes.
Reduce heat to low, cover, and cook until vegetables are tender, about 10 minutes. Check them occasionally, if they look dry and begin to burn, add a little water.
Uncover the pan, stir in garlic and chilis - cook for 1 minutes.
Add tomato, mint, cilantro, and salt and stir to combine. Pour in beaten eggs, distributing evenly over the vegetables. Cook, mixing lightly to scramble the eggs, until eggs are just set - about 2 minutes.
Immediately remove pan from heat. Transfer to warmed platter and garnish with cilantro.
