early in day
in Dutch oven or heavy kettle, melt butter
stir in flour
cook over low heat until brown
add garlic, onions, green pepper
cook slowly until tender
add tomatoes and rest of ingredients except shrimp, rice, parsley
simmer, uncovered for 45 minutes
cool; refrigerate
to serve
heat tomato mixture over medium heat till just boiling
add shrimp;simmer, covered 5 minutes or until shrip are pink and tender
toss hot rice with parsley
serve gumbo in shallow plates; add "island of parsley and rice at sie of each plate.
let flavors mix together in the refrigerator overnight for better flavor
can be frozen, but shrimp may become a bit rubbery with reheating in microwave;
so reheat on the stove top
