"pretty easy to make. i do agree with using fresh rosemary. i used a little more chicken broth (1/2 cup more) to smooth out the garlic taste, a little strong for me. other than that, will make again."

6 Baking potatoes
2 tblspoons Butter
2 tablespoons rosemary leaves; chopped
salt and pepper; to taste
1 cup Reduced salt chicken broth
1/2 cup Parmesan cheese

Preparation

Keeping cloves intact, cut 1 inch off top of garlic bulb. Sprinkle oil over garlic. Wrap loosely with foil and bake in a 350 oven for one hour. Squeeze garlic from skin; discard skins. Cook potatoes until tender; drain and pare. Mash while hot. Add garlic and butter; mix until butter melts. Add rosemary, salt and pepper. Stir in broth, a little at a time; beat till smooth and fluffy, adding broth as needed. Stir in parmasan cheese. Makes 8 servings.

Delicious … I cut down on the RoseMary to 1 Tbsp. … these potatoes have a very nice taste, they are creamy and the smell of the roasted garlic is totally awesome!
