Ready in 15 minutes
An incredible combination of flavors! Definitely a hit! If you don't have kalamata olives, or don't like them, then just leave them out - do not substitute regular black olives (the flavor will not go well).
1. Peel the orange and separate the sections. Remove any course membranes, then cut each section in half and place in a small bowl. Toss with a teaspoon or so fo dressing, just enough to coat them lightly.
2. Place the spinach and scallions in a large salad bowl. Just before serving, toss with approximately cup dressing, just enough to coat the leaves.
3. Divide the spinach onto 4 salad plates. Sprinkle on the oranges, feta cheese, and olives. Serve immediately.

sheris 3y agoI made this for a group of people and thought I would have plenty for my own personal leftovers. Well I was wrong, it went quickly and it was very easy to make. Really delicious and refreshing flavors.

FeliciaYW 6y agoI made this last night. The only changes were that I used a can of mandarin oranges and I left out the olives. Everyone raved about how great it was!
