Tender and chewy, bulgur wheat is a good source of dietary fiber as well as protein.


1/2 cup fine-grained bulgur wheat
1/2 teaspoon Coarse salt
3/4 cup Boiling water
2 tablespoons Fresh Lemon Juice
1 tablespoon olive oil
coarse salt and ground pepper
2 tablespoons scallion; minced
3/4 cup seedless grapes; halved
1/2 cup Walnuts; chopped
1/2 cup feta cheese; crumbled

Excellent salad! The combination of Feta, walnuts and grapes is fantastic!

I found this recipe very easy to make. I liked that it only made enough for 2 servings since I'm the only one in my house that likes this kind of food. I did find that it tasted and texture was better the day I made it. It was a great meal to bring to after school sporting event to munch on. Thanks for sharing it.
