Ready in 50 minutes
Easy, simple, and full of flavor. Just like Oma used to make =)
In a skillet, brown chicken in oil; pour off fat. Add broth, tomatoes, onions, garlic, salt, turmeric, pepper, crushed red pepper (if desired) and bay leaf.
Cover; cook over a low heat 15 minutes. Add remaining ingredients.
Cover; cook 30 minutes more or until chicken and rice are tender; stir occasionally.
Remove bay leaf & serve.
I keep a number of hot sauces on hand and sprinkle on to the plated dish liberally at tableside. My favorite on this dish is a fantastic sauce from Costa Rica called "Lizano Sauce". Choose your own hot sauce and make this dish your own!
memackjr 1y agoTasty and easy to make! Good as leftovers too!
meg_graham 1y agoEasy to cook dish but super flavourful! It was a hit with my boyfriend and I, so I can't wait to cook it again for the rest of our families!
Gbishop34 1y agoVery easy and delicious. I didn't have turmeric, so I used ginger. Such a great healthy meal.
dlb555 1y agoEasy and perfect recipe to use I only added hominy and marinated chocked for 30 min in lemon juice , soul salt and paprika with coconut water & it was beautiful.
Mattdylan 2y agoThis dish was absolutely delicious! The whole family enjoyed it. The only thing I did differently was doubled the amount of ingredients bc I have a large family and used one can of regular diced tomatoes and one can of zesty jalapeño diced tomatoes. Perfect little zip!
foodieluv23 2y agoOh yeah! And I added crushed red pepper and chices mixed in a blender with a bit of water for a little kick.
msanders93 2y agoVery good! I substituted one can of Ro-Tel tomatoes and I left out the peas because I didn't have any in the house. Can't wait to make it again!

jmschaub 2y agoNice subtle flavoring. A little spicier and it might earn a 5th start :)
