2 tablespoons lemon juice

2 ounces fresh mozzarella cheese; diced
1 cup cherry tomatoes; halved
1/2 cup chopped fresh basil

1. cook the penne according to the package directions. omitting the salt if desired. drain and rinse under cold running water. Drain again.

2. to make the dressing, heat the oil in a small skillet over medium heat. add the garlic and red pepper and cook, stirring often until the garlic is golden, 2-3 minutes. transfer the oil mixture to a large bowl, stir in the lemon zest, lemon juice, salt and pepper. add the pasta, mozzarella, tomatoes, and basil, toss to coat.
