1/2 Red onion; finely chopped
Salt and pepper
1/4 c fresh basil; Chopped
1/4 lb Fresh mozzarella; finely chopped
4 tb olive oil
4 sl Italian bread; Toasted
2 tb Balsamic vinegar; or red wine vinegar
3 Plum tomatoes; finely chopped
2 tb Capers

Preheat broiler. In a large bowl combine tomatoes, onion, capers, basil and mozzarella. Stir in balsamic vinegar and olive oil. Season with salt and pepper. Top toasted bread with the mixture and place on baking sheet. Broil until cheese melts. Serve hot. Alternative: Substitute 1 cup canned northern white beans for cheese and just top toasts with mixture. I thought it was good. My only complaint is that there was too much liquid, which made the bread soggy.

I made it with 1 1/2 red wine vinegar and 1/2 balsamic vinegar. It gave it not quite as strong a taste.
