2 tb Lemon juice
1 3/4 c Honey
6 c Strawberries; sliced

In saucepan, combine strawberries and pectin, mashing or crushing berries to blend completely. Bring mixture to a boil. Boil hard for one minute, stirring cinstantly. Add honey and lemon juice. Return to a rolling boil for five minutes, stirring constantly. Remove from heat. Skim off foam. Ladle into hot sterilized jars. Seal. Makes eight 1/2 pints. Smells and tastes great, but set a little too firmly, more like jello than jam. I think i will halve the pectin next time. My yield was also only 5, not 8, half-pints. Otherwise, a great recipe. Thanks!
