Quick and Easy Mexican fare.

"This was a HIT for my family!!! I tweaked the recipe a little. As the ground beef and onions cooked, I added salt, fresh ground pepper, and garlic powder. I was fresh out of cream of chicken soup, so I improvised, I added 8 oz sour crean. I also added fresh chopped cilantro to the mix. I only had sharp cheddar and pepperjack cheese, so I used that. I did not tear my corn tortillas, I layered them like lasagna. I used about18(3 layers). Toped w cheese and a little more chopped cilantro for color This w wwill be on my regular menu now. Thank you for sharing!"


Ingredients

1 1/2 pound Hamburger
2 12-oz cans Enchilada Sauce
2 4-oz can Green Chilies; chopped
12 ea Corn tortillas
1 12-oz can Cream of Chicken Soup
1 can (12 oz) Cream of mushroom soup
1 ea White Onion; chopped
2 cup Cheddar & jack cheese; shredded

Original recipe makes 6

Preparation

Brown hamburger and onion. Pour off fat. Cut tortillas into 1" squares and mix with all the other ingredients except cheese in a large bowl. Add drained hamburger. Mix and pour into a 9x13 glass casserole. Spread cheese evenly over mixture. Bake covered at 375 for 1 Hour. Serve with Sour cream and Salsa.

Granted I haven't tried this recipe, but one thing that might have helped is frying the tortilla slices. Make them into chips. It's an extra step, but most definitely wouldn't come out 'soupy.' Of course moderation also, guys. What the recipe calls for is too much. Not unless you guys are making like two trays?

I used corn tortillas. I did not like the taste. Close to a soupy consistency. Maybe take out tortillas and use as a dip. Needed something, not sure what. Won't b making again.
