Easy, cheesy, spicy and hearty!
1. Preheat oven to 350 degrees.
2. Cook ground beef until almost done. Add garlic and onion to ground beef, cook 5 minutes. Drain excess grease. Add salsa, salt, 1 cup cheese, and 2 tablespoons enchilada sauce. Mix well and set aside.
3. In saucepan heat olive oil over medium heat. Add flour, mix well, and cook until bubbly, about 3 minutes. Add remaining enchilada sauce, whipping cream and cumin. Cook about 5 minutes, until thick.
4. Pour 1 cup sauce over the bottom of a 13 x 9-inch baking dish. Arrange 6 corn tortillas, overlapping, in sauce. Gently spoon meat mixture over tortillas then arrange remaining 6 corn tortillas, overlapping, on top of meat mixture.
5. Cover with aluminum foil and bake 40 minutes. Uncover and sprinkle with remaining 1 cup cheese. Bake 5 minutes longer until cheese melts.
6. Pass sour cream and sliced black olives as desired for garnish.
