Chicken & cheese-Stuffed tortillas topped with a cheesy, creamy enchilada sauce. What's not to like?
Melt 2 tablespoons butter and cook onions and green pepper in it until softened. Remove to a bowl. Stir chopped chicken and green chilies into onion-pepper mixture. Melt remaining 3 tablespoons of butter. Blend in flour and seasonings. Whisk in chicken broth. Cook, stirring, until sauce boils. Remove from heat; stir in sour cream and 1/2 cup cheese. Stir 1/2 cup sauce into chicken mixture. Add enchilada sauce and evaporated milk to remaining sauce and bring to simmer.
Dip each tortilla in remaining hot sauce to soften (or simply warm them over stove) and spoon chicken mixture into center of each tortilla. Roll up and arrange on 13"x9"x2" pan; repeat with all tortillas. Pour remaining sauce over tortillas. Sprinkle with remaining cheese. Bake uncovered at 350 for about 25 minutes.
jdriemeyer 2m agoFive+ stars! This sauce is just amazing. It does make a little too much for the 9x13 pan though. Maybe get some extra tortillas and increase the filling ingredients, so you can make a few extra enchiladas to freeze with the leftover sauce, because you don't want to waste one ounce!!

Aimeelady 3y agoEasy to make and just great tasting. I've made these a few times, this time I made them just cheese and wow. We just love the creamy cheesey sauce. its a big favorite here.
Sujen 3y agoDelicious. My husband requested that I make this again. I prepared it as mostly directed, except I used a poblano pepper instead of a bell pepper, and added mushrooms. I also used olive oil instead of butter. Yummy!
NellyO 3y agoI just adore the idea of adding special ingredients to prepared sauce to make them something special! I've made this sauce before, I know it, Toss some rotisserie chicken in, add cheese and bake for a real good dinner. Even my kids loved it!
Omnivorous_Knid 3y agoSimple to make, and an amazingly sumptuous sauce that left me wanting more and more of it. I daresay filling them with only cheese would be enough but no, you had to go and add chicken to make my tastebuds strain for more! Served with black beans, rice, and my signature avocado cream sauce just because. Absolutely terrific, well done!
Bikerdad 3y agoVery delicious recipe with a good cream sauce to it. I used leftover chicken and my girls ate it all happily. They liked the cheese sauce very much so I will try using it to top chicken breasts too.
JRowler 3y agoThe.Best.Enchiladas.EVER. Good golly, these were fantastic!!!! So much healthier than the other recipes here since most of them require you fry the tortillas in LARD or worse. Simple to make and darn impossible to stop eating them! I served them with the rice cooker Mexican rice the poster has on file for a dinner full of WIN and only pan scrapings left over!
ZeroTheHero 4y agoI used leftover turkey, this is one of those times the sauce makes the dish, wowsers! I'm stealing the sauce recipe for other things!
