Cheesy, chicken and black bean enchiladas.
Spray 9" x 13" pan with cooking spray. Pour one can enchilada sauce on bottom of pan. In a bowl, mix beef, beans, Velveeta and Rotel. Place mixture in each tortilla and roll it up. After you have all your tortillas rolled, pour second can of enchilada sauce on top and spread cheddar cheese over everything. Cover with foil and bake at 350 degrees for 30-35 minutes.
