This Shrimp dish has been passed around my family for years and its still the dish my grandmother makes for special occasions.

1 1/2 pounds Jumbo Shrimp; (Peeled and Cleaned)
2 tablespoons Extra Virgin Olive Oil
2 tablespoons Butter
3 cloves garlic; (Minced)
1 cup Yellow Onion; (Chopped)
1 cup Green or Red Peppers; (Chopped)
2 large Tomatoes; (Chopped)
1/4 cup Water
1/4 Dry White Cooking Wine
1 1/2 teaspoons Cumin
1/4 teaspoon Cayenne Pepper or Paprika
2 tablespoons Tomato Paste
1/2 teaspoon Salt and Black Pepper
1 tablespoon Cilantro; (Minced)

Original recipe makes 4



In a large pan add EVOO and butter on Low/Med heat until it begins to foam over. Add onion and pepper and saute until translucent.

Add Garlic and tomato saute for 2 minutes.

Add tomato paste, water, wine, Cayenne Pepper, cumin, and salt and pepper mix well.

Cover and raise the heat to Medium simmer for 5-7 minutes.

Add shrimp cover and simmer for another 10-15 minutes.

Serve Over White rice.
