Irresistible, men and children in particular love it!
1) If you are making your own meringues (recommended): preheat oven to its lowest setting.
2) Whisk egg whites in clean bowl with lemon juice until egg whites hold firm peaks.
3) Gradually whisk in sugar until mixture is glossy.
4) Spread mixture in thick on baking parchment or waxed paper on a baking sheet.
5) Bake meringue for 2 hours, then leave to cool. Break up into 1 inch pieces. Doesnt matter what they look like, so long as they arent burnt.
To assemble:
6) Whip cream until it forms soft peaks.
7) Mix most of the strawberries with kirsch or sherry. Take just 8-10 strawberries and whiz with the confectioners sugar in a food processor or blender.
8) Just before you want to serve, mix cream, meringue and fruit. Stir in strawberry puree from the food processor so you get a swirly marble effect.
9) Adorn with mint leaves
