Low fat and carbs but lots of flavor. Try this instead of mashed potatoes.

"I didn't use margarine or potato flakes. These are a good alternative, but the consistency is a little weird. Also, they get cold really fast. I'll make again since I'm eating low carb, but if not real potatoes are best. "

Ingredients

Are you making this? 
1 Head cauliflower; cut into florets
2 tablespoons garlic; roasted
1/2 teaspoon Kosher salt
1/2 teaspoon Black pepper
2 dashes hot sauce
1/4 cup Milk 1%; as required
1/2 cup Potato flakes; -optional
1 tablespoon Margarine; - corn oil

Preparation

Roast garlic in 350 ovens for about 40 minutes, covered with foil.

Bring large pot of water to boiling. Add 1 tablespoon. salt. Boil cauliflower for about 7-10 minutes or until completely cooked through but not mushy. Drain well.

In food processor or blender, add drained cauliflower and remaining ingredients. Puree.

The potato flakes give it just enough of that "potato" flavor to make it nice without adding too many carbs or calories. Some people like to start out with more potato flakes and cut back in successive recipes as they (or their families) get used to the flavors.

I made this and it was great. It was really hard finding 350 ovens to cook in. But I managed to get my town together and get the task done ! Mass cooking is my favorite!

These were delicious! My husband had no idea they were actually cauliflower and wants these instead of mashed potatoes from now on! I didn't have to add the flakes either - they were perfect without!

I could definitely tell this was cauliflower. The consistency was a little runny for my taste (I even added less milk) I'll try it again but I'll take others suggestions of steaming not boiling and adding some real potatoes for better texture.

Fabulous. Did not add the potato flakes as I did not have any. This is THE best way to ear cauliflower.
