As creamy as the real thing, cauliflower provides a yummy stand-in for mashed potatoes, and even grits!
Steam or boil cauliflower until very soft (steaming retains more nutrients), about 10 minutes. Once soft, mash cauliflower with a potato masher or ricer, just like with mashed potatoes. Stir in butter, cream cheese, and cream; continue stirring over low heat, adding salt and pepper to taste. Add other mix-ins as you would with mashed potatoes. Leave consistency rough for grits, or whip/blend for a finer mashed consistency.
