Risotto dish as a complete meal
In a skillet over medium heat 1 tablespoon olive oil. Add fennel and sausage breaking up meat. Cook until meat is browned and fennel is tender (8-12 minutes). Cover and keep warm
Bring chicken stock to a low simmer.
In large low saucepan heat 2 tablespoons olive oil. Add the shallots and cook until softened (3-5 minutes).
Add the rice and stir until rice is thoroughly coated with oil.
Crumble saffron into sake and add it to the rice, cook until nearly absorbed, stirring it regularly
Start adding stock 1/4 to 1/2 cup at a time, stirring regularly, making sure liquid has been absorbed before adding more.
When the rice is about half done stir in the mushrooms and peas (10-12 minutes)
Continue cooking adding stock as needed until risotto done. rice grains should be creamy on the outside and firm yet tender to the bite (al dente) (total time 20-25 minutes). Depending on rice you may not need all the stock, if more is needed just use hot water.
Add salt and pepper to taste
Stir in sausage mix, cheese, butter and parsley.
Serve immediately.
