2 tb Extra-Virgin Olive Oil
1/3 c Walnuts; chopped
1 lg head radicchio; separated from outer leaves
2 lg bulbs Fennel; trimmed

Original recipe makes 1



Place fennel in medium bowl. Add oil and toss to coat. Season to taste with salt and pepper. Place 1 radicchio leaf on each plate. Fill with fennel. Sprinkle with walnuts and serve. Serves 6. Bon Appetit March 1993

Turned out great! Kids were eating them as soon as they cooled. We also used a sugar/cinnamon dust as well as powder sugar topping.

YUM. I sliced the fennel really thinly. Unfortunately I didn't have any radiccio so I omitted it, but definitely will include it next time. The walnuts and fennel are a great combination.
