Just like Granndma used to make for all occasions. What a wonderful comfort food.
Preheat oven to 400
Mix eggs, sugar, vanilla, and salt in a medium bowl. DO NOT over beat - too much air in the batter will make it grainy.
When milk is ready, start whisking the egg mixture continually as you slowly add 1/3 of the hot milk. This will temper the egg mixture. If you add the milk too quickly you will scramble the eggs. Once the mixture is tempered add the rest of the milk while slowly stirring.
Slowly pour the mixture into the pre baked pie shell. Sprinkle the top with nutmeg. Protect the crust with aluminum foil or a pie crust shield.
Bake for 30 - 35 minute in a regular oven or 20 -25 minutes in a convection oven. The pie should be slightly jiggly but an inserted knife should come out clean.
Serve plain or with whipped cream.
