Suggest a better descriptionCook pasta as directed on box. Drain all canned goods place in bowl with pasta. Chop cilantro and bell pepper, add to bowl. For the dressing, In a separate bowl add jalapeƱo, garlic and shallot (all minced). Add mustard, cumin, honey, lemon and lime juice, mix well. While mixing ( I like to use a fork) slowly pour in oil to emulsify. Pour dressing on beans and pasta mixture and mix well. Add in the green onions. Let sit in refrigerator for an hour to allow the FLAVORS to develop.
You can definitely make this your own, add tomatoes or other vegetables. Or take out the pasta and serve with French baguettes sliced and grilled for a fun appetizer.
