This recipe has always been a hit at potlucks for me.

"Loved It!!! Boiled rice in Swanson's Mexican Tortilla Broth (beware vegetarians, it has chicken broth in it), Added Cilantro, and topped rice with Shredded Cheddar Cheese & Tortilla Strips. The finishing touch was a side of salad w/ranch dressing. Next time I'll add a little spice. It was great w/o it, but next time I just want a little kick (& some sweet fried plantains)."

Ingredients

Are you making this? 
2/3 cup White Rice; raw
1 14-oz can Corn; drained
1 14-oz can Black Beans; drained
6 each Green Onions; sliced
1/4 cup Jalapeno peppers; sliced
Dressing:
1/4 cup olive oil
1 tablespoon Cider vinegar
2 tablespoon Lime juice
1 teaspoon Chili powder
1 teaspoon Molasses
1/2 teaspoon Salt
1/2 teaspoon Cumin

Original recipe makes 6

Servings  

Preparation

Cook rice in usual fashion and cool. Mix remaining salad ingredients in bowl. Whisk together dressing and toss to coat. Refrigerate 2 hours before serving.

This a very good salad, I added cilrantro, does need a little more heat, might add an extra pepper next time I make it.

This was quick to make with on-hand ingredients. I even added it as a topping on my favorite recipe for Blackened Salmon Tacos that a friend shared with me a few years ago. The whole family loved it! Definitely on my favorites list. ;)

Just made for a potluck tomorrow and it turned out yummy! I used black beans with lime and jalapeño.

I love this dish. I didn't have onions, molasses, and cumin. But cilantro, onion powder, red peppers, and a little sugar made nice substitutes. I'll be making this frequently.
