This recipe has always been a hit at potlucks for me.
Cook rice in usual fashion and cool. Mix remaining salad ingredients in bowl. Whisk together dressing and toss to coat. Refrigerate 2 hours before serving.
analea_g_81 2y agoLoved It!!! Boiled rice in Swanson's Mexican Tortilla Broth (beware vegetarians, it has chicken broth in it), Added Cilantro, and topped rice with Shredded Cheddar Cheese & Tortilla Strips. The finishing touch was a side of salad w/ranch dressing. Next time I'll add a little spice. It was great w/o it, but next time I just want a little kick (& some sweet fried plantains).

chand2cats 4y agoThis a very good salad, I added cilrantro, does need a little more heat, might add an extra pepper next time I make it.

DrgnHrt 4y agoThis was quick to make with on-hand ingredients. I even added it as a topping on my favorite recipe for Blackened Salmon Tacos that a friend shared with me a few years ago. The whole family loved it! Definitely on my favorites list. ;)
Oriei 4y agoJust made for a potluck tomorrow and it turned out yummy! I used black beans with lime and jalapeño.
adouglasx 4y agoI love this dish. I didn't have onions, molasses, and cumin. But cilantro, onion powder, red peppers, and a little sugar made nice substitutes. I'll be making this frequently.
