David Veljacic is a Vancouver BC Fire Chief. He is well known for his barbecue recipes, which he creates and serves to his fellow firemen. His cook book is "The Fire Chef".
This recipies incorporates is one of his favourite flavours -- balsamic vinegar -- and a fruit. This has an added advantage of a short marinating period.

Preheat grill to 350 degrees.
1. Prepare a marinade and basting sauce by combining the olive oil, vinegar, garlic, black pepper and salt in a glass jar. Cover with a lid and shake well. Pour two-thirds of the sauce over the steaks in a shallow glass dish and put the remainder in a small saucepan.
2. Allow the steaks to stand aT room temperature for half an hour or more. Turn the steaks several times during this period.
3. Pat the steaks dry with a paper towel and put them on the grid of a preheated barbecue. Grill them over a medium heat (350 degrees F) for a total time of 8-10 minutes. turn and baste often with the marinade.
4. five minutes after you begin cooking the steaks, put the slices of papaya on the barbecue. Grill until lightly browned.
Put the steaks on dinner plates. Bring the remaining sauce in the saucepan to a low simmer and drizzle it over the steaks. Put a slice of papaya on each steak and squeeze the juice of a lime over each serving.
My variation:
I blended ~ 1 cup of papaya with the rest of the marinade; and left the marinade for 5 hours.
