Variation on the standard Beurre Blanc made quickly in the Induction Kenwood.
1.Finely chop the shallots in the Food Processor Attachment.
2. Put the chopped shallots, white wine vinegar and water in the bowl and attach the Power Whisk. Set the heat to 100?C and the speed to stirring 2. Reduce the liquid by 2/3, then turn the temperature down to 90?C. Add the butter bit by bit.
3. Season to taste; Add 45ml (3 tbsp) of fine herbs such as chervil and tariagon to the sauce.
