Delicious tacos made with flatiron steaks. If you don't have flatiron (thin-cut) steaks, you can press thick-cut steaks.
Heat broiler to high.
Line a large baking sheet or broiler pan with foil.
In medium bowl, combine cabbage, lime juice, and garlic. Season with salt & pepper.
Let stand 10 minutes (or overnight).
Sprinkle steaks lightly with cumin, season with salt & pepper.
Place on the baking sheet and broil 4 inches from broiler element for 6 to 8 minutes (medium-rare).
Transfer steaks to a plate, let rest for 5 minutes, then slice into thin strips.
Stack tortillas and wrap with a double layer of damp paper towels.
Microwave for about a minute until hot and steamed.
Assemble tacos: Layer steak strips, cabbage, cheese, and salsa.
Substitute other cheeses, make homemade salsa if desired. Use Gluten-free corn tortillas if necessary.
