Ingredients

1 1/2 cups Flour, Whole Wheat Pastry
3/4 cup Flaxseed Meal
Oat Bran Cereal
1/2 cup Brown sugar
1/4 cup Splenda
2 teaspoon Baking soda
1 teaspoon Baking Powder
1/2 teaspoon Kosher salt
2 teaspoon Cinnamon
1/2 cups Carrots; - finely shredded
2 large Apples, Granny Smith; - peeled and shredded
1/2 cup Raisins; (optional)
1 cup Nuts, mixed (no peanuts); - chopped
3/4 cup milk
2 large Eggs; - beaten
1 teaspoon Vanilla extract; as required
1 teaspoon Blackstrap Molasses; - optional (improves flavor)

Original recipe makes 28

Servings  

Preparation

Pre-heat oven to 350F

Mix together flour, flaxseed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl.

Stir in a separate bowl carrots, apples, raisins (if desired) and nuts. Combine milk, beaten eggs, molasses, and vanilla with other moist ingredients. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. DO NOT OVER MIX.

Fill muffin cups 3/4 full.

Bake at 350F for 15-20 minutes.

Made without carrots, nuts, ect... the muffins were still great can't wait to experiment with this recipe...
