If you don't have pancake mix, this is a quick easy recipe that kids love.
"I doubled the recipe since I have 3 kids and it made about 3 each that were pretty good size! I was a little worried about how much baking sod. Recipe called for but came out great! I premix all the dry ingrediants in batches in put in jars and have ready to go for quick breakfasts and just have to add eggs, milk and oil! "- Sarah2282
Combine all ingredients in medium bowl and stir with a whisk until batter is smooth. Heat non-stick pan to medium heat. Cook 1st side until bubbles form on top and they start popping, flip and cook until both sides are light brown. Let cool slightly on a cookie cooling rack...this way they don't get soggy.

tlbarker72 1 year agoVery nice! My pancakes were light and fluffy and very tasty. Left out the cinnamon, but only because I'm not a huge fan. Will definitely make this again.

borchert0220 1 year agoReally good pancakes. The only problem I had was the first ones turned out flat but I let the batter sit for about 3 minutes and then they came out fluffy.
