A little bit of crust, a little bit of chocolate, a little bit of cream cheese and a little bit of cool whip topped off with chocolate shavings or sprinkles makes this a wonderful frozen dessert that there is no need to serve this with ice cream. You can serve this unfrozen too, but once you've tasted it frozen, you won't have it any other way! This cake is served in my home at Christmas every year, but it's a great cake to make any time.
Preheat oven to 375 degrees to bake crust. Make chocolate pudding according to package directions but use only 3 cups of milk - pudding should be firmer than normal, place in refrigerator to cool. Crust: Add walnuts to the flour; with a pastry cutter or two forks, cut the margarine into the flour and walnuts until flour appears coarse. Pour flour mixture into an ungreased deep rectangular baking pan no smaller than 9"x13", press pastry into pan with fingers evenly. Place pan on top rack of oven and bake for about 15 to 20 minutes until the pastry is firm and lightly golden. Set aside to cool. While pastry is cooling, in a large bowl place the softened cream cheese then, a little at a time, add confectioner's sugar to the cream cheese while mixing with hand mixer on medium speed; continue to add the sugar until all the sugar is blended with the cream cheese, then add 1 cup of the cool whip to the cream cheese mixture a little at a time until cream cheese is soft enough to spread easily, set aside. When crust is cooled, spread the prepared cream cheese and sugar carefully over the crust; then spread the prepared pudding over the cream cheese; finally, spread the remainder of the thawed Cool Whip over the pudding. Sprinkle chocolate sprinkles or shave a chocolate candy bar with a potatoe peeler over the Cool Whip. Freeze until solid, or place in refrigerator for 2 hours until everything sets. If eating frozen, remove from refrigerator 1 hour before serving to allow to thaw slightly so that it can be cut with a knife.
