These are great to make ahead, wrap in parchment paper and freeze for those busy mornings
In a large skillet, brown sausage on medium heat. Turn down burner to medium low heat and add peppers and spinach. Once spinach is wilted, add beaten eggs. Stir until eggs are cooked, transfer to bowl and let cool.
Meanwhile, cook hash browns according to package instructions, transfer to bowl and let cool.
For each burrito, spread 3 tablespoons of hash browns, approximately 1/2 cup of sausage and egg mixture and 1/8 cup of shredded cheese. Tightly roll burrito and then wrap in parchment paper. Stick them into gallon size plastic freezer bags with label.
To reheat, unwrap and microwave for 2-3 minutes. Garnish with salsa (optional).
