Trim excess fat off beef and rub with salt and pepper. heat oil in large skillet and brown beef on all sides, about 8-10 minutes. Place beef in slow cooker with remaining ingredients except buns and butter. Cover and cook on low for 8-9 hours,until beef is very tender. Or, bake in large covered casserole at 350 for 3 hours or until beef is very tender.
Remove beef from broth and strain broth. Cool beef and broth in fridge. When meat is cool, slice thinly against the grain. Place slices in zipper-lock bag and cover with strained broth. Slice sandwich buns in half and spread cut sides with butter. Place buns in zipper-lock bag and attach to meat bag, lavel and freeze.
Thaw everything overnight in fridge. Place beef and broth in large skillet and heat over low heat until very hot. Brown the split buns under broiler. Make sandwiches with beef and buns, serve broth on the side for dipping.
