This is one of my family favorites snacks since we moved in caribbean. Definitely need to be served with tortilla chips.
Taste this and you might feel on a tropical island :)
Remove shell and devein the shrimps. (watch this video how: http://video.about.com/japanesefood/How-to-Devein-Shrimp.htm) Boil for 3-4 minutes and when done, leave few minutes to chill and cut each shrimp in 2-4 pieces (depends how big you want them). If are small shrimps, you can leave them full size.
Clean and dice all vegetables.
Add all ingredients in 1 bowl and stir until everything look like in my photo.
Need to be served with tortilla chips.
p.s. You can leave few shrimps& parsley for decor
Keep in mind that I'm not a huge fun of ketchup, but in this combination, is amazing.
