Fresh Crisp Calamari Salad

Ready in 20 minutes

Cold tender rings of calamari, blanketed in olive oil and lemon with the sharp bite of olives, red onion and garlic. Refreshing and light for a warm day filled with sunshine.


1 lb Calamari; cleaned and cut into rings
0.25 cup good cold pressed olive oil
0.25 cup fresh squeezed lemon juice
2 cloves garlic; diced or crushed
1/4 red onion; diced
1 red tomato; diced
1/2 cup sliced kalamata olives
1.5 cups white beans; canned is fine, but drained
3 tbsp Capers
1 cup fresh curly parsley; minced
1 salt and pepper; to taste

Rinse and drain calamari rings.

In a saute pan, with an inch of water, poach rings until just firm.

Mix remaining ingredients into a non metal bowl. Toss in poached and drained calamari rings. Toss until well blended. Chill for up to 8 hours or over night.

Serve with fresh crusty Italian bread and an ice cold Pinot Grigio.
