Fresh Made Caesar Salad

Better than restuarant quality flavour, quickly made from scratch in your own home...

Ingredients

2 heads romaine lettuce; cut into bite-sized pieces
1 egg yolks
3 tablespoons parmesan cheese; fresh grated
1/4 cup extra virgin olive oil
anchovy paste, to taste
dijon mustard, to taste
2 cloves garlic; minced or pressed
salt and pepper; to taste
parmesan cheese; to garnish plates

Yields: 5-6 Servings

Add the garlic, the anchovy paste, mustard and egg yolk to a large bowl and blend together until thick and smooth.

While whisking, slowly drizzle in the olive oil until you have a smooth emulsion, but you may need to add more depending on the freshness of your eggs.

Pour half the dressing into a small bowl and add 3/4 of the lettuce the using a spatula, toss to coat the lettuce, then add the rest of the lettuce once the first part is coated.

Add the rest of the dressing one 1 TSP at a time until it is coated to your preference, then season with salt and pepper to taste.

Top the whole bowl with the parmesan cheese or use extra cheese to dress solo plates

I've made scratch Caesar Salad for years, I was taught by a chef at a 5 star restaurant in my 20's. There's only a couple differences in the way the chef showed me. 1st "Always make Caesar Salads in a wood bowl" (something about proper flavor distribution of the anchovies). 2nd- Use 1 to 1.5 tsps of Worshestire sauce (depending on servings size) 3rd- Squeeze 1/2 half of fresh lemon only thru netting or cheesecloth (do not use lemon juice). Also, make sure ALL your ingredients are fresh, best brands, not pastes, real anchovies & garlic, etc. Anyways, just my two cents, but trust me if you take the time, do it right, this will be the MOST SPECTACULAR CAESARS SALAD you'll ever taste. Thanks!

I 'think' this is a good recipe but it's always a guessing game when I make it as it doesn't say how much dijon or anchovy paste to add so the dressing isn't quite right.... shame.

It is so nice to see a Ceasar salad that actually contains proper ingredients. I am so tired of restaurants that serve the "romaine lettuce with whatever creamy dressing is sitting around" version.
