Ingredients

1/2 c Vegetable oil
1 10-oz package frzn sweet Strawberries *
1/2 ts Almond; or vanilla extract
1 c Sugar
1 ts Baking soda
1 3/4 c All-purpose flour
2 x Eggs
1/2 c Walnuts; chopped

Preparation

* or 1 cup crushed fresh strawberries mixed with 3 T sugar Mix together flour, baking soda, sugar and nuts in a bowl. In another bowl, beat together eggs, flavoring and oil until well blended. Add strawberries and beat at slow speed of mixer until berries are partially broken. Beat in flour mixture slowly until smooth, but pieces of berries are still visible. Pour batter into greased muffin tins, filling to half. Bake at 350 deg F for 30 minutes, or until they test done. Or, bake in greased 9x5x3" loaf pan for at 350 deg F for 1 hour, or until done. These were very good! Because of other reviews, I added a bit of baking powder to the recipe to make sure they rose. I was only able to get 21 cupcakes out of the batter, but I was ok with it. They came out more like a muffin, but that may have been because I changed the recipe a bit. This will be my go to recipe any time I want to make a bread like dessert with strawberries!

Great flavor but the actual cupcakes are so moist and dense that adding extra flour and extending the cooking time still didn't help. The cupcakes didn't rise and had the texture of fudge on the inside.

I mde them for my moms 43d birthday, everybody loved it.But I didn't use walnuts.

I used the almond extract and the flavor overwhelmed the strawberry flavor. If i make them again I'll probably use vanilla. Pretty tasty though! Put a cream cheese frosting on top!
