Ingredients

200 grams Minced pork
1 Red chilli
80 grams Bitter Gourd
5 Eggs; (Grade A)
1 SEASONINGS
5 tsp light soy sauce
1 tsp Sugar
2 tbsp XO sauce

Servings  

Preparation

1.Rinse pork and chop finely. Rinse chilli, remove the seeds and cut into shreds. Rinse bitter gourd and remove the seeds, then cut into shreds. Beat eggs in a bowl.

2.Bring 500ml of water to boil, scald minced pork in boiling water for 1 minute, remove and drain.

3.Heat up 3 tablespoons of oil, add in XO sauce, bitter gourd and minced pork, fry over low heat till fragrant.

4.Add in eggs, red chilli and SEASONINGS, fry over high heat till eggs are fully cooked.

5.Serve.
