Select firm tomatoes, wash., remove stem end blossom , scars and cut into 1/2 inch, crosswise slices. Mix flour, salt and pepper and dip both sides of tomato slices into mixture. Heat shortening in skillet until sizzling hot. Put in tomatoes and cook rather quickly until browned on the underside. Then turn tomatoes carefully, reduce heat and cook until thoroughly hot and soft through center. Remove to a hot platter and serve piping hot , either plain or with a cheese or onion sauce
