Easy. The kids like them anyway.
Cube the potatoes and place in a medium saucepan. Cover with water and bring to a boil. Reduce heat to medium/high and cook until potatoes are fork tender. Drain potatoes.
Add the butter to a skillet and melt on low. Add the potatoes and cook on medium/high turning the potatoes occassionly. Add salt and pepper to taste and continue cooking until the potatoes are lightly browned. Remove potatoes to a serving bowl.
Optional: Sprinkle lightly with dried parsley and/or paprika for color before serving.
