Suggest a better descriptionPour the beaten eggs into a prepared pan to form a large pancake. Flip if necessary. When done, set aside to cool then cut into 1 inch pieces.
Heat oil and add green onions and carrots. Stir-fry for 1 1/2 minutes.
Add garlic, chile, & ginger. Stir-fry for one minute more.
Add soy sauce, sesame oil, and rice. Stir-fry for 2-3 minutes.
Add meat, peas, and egg pieces. Stir until heated through.
(Meat can be easily halved, especially if it's a side dish.)
